  • Bread, Cake, Dosa, Idli, Beer, Wine, Vinegar, Vitamin pills, Cheese contain Yeast which is also a fungus!
  • Fungi are an essential component of the human gut mycobiome (fungi) needed for us to be healthy and survive!

Note Mushrooms…

  • Cooking mushrooms in a pressure cooker is generally not recommended, especially for delicate varieties like oyster mushrooms. Mushrooms have a high water content and a delicate texture, and cooking them under high pressure can cause them to become overcooked, rubbery and mushy.Pressure cooking is better suited for foods that require longer cooking times or tougher cuts of meat that benefit from the high-pressure environment to tenderize. Mushrooms, on the other hand, cook relatively quickly and are best cooked using gentle methods like sautéing, stir-frying, or baking.If you’re specifically cooking oyster mushrooms or other delicate mushroom varieties, it’s best to use traditional cooking methods that allow you to control the cooking time and temperature more precisely. This will help you retain their texture and flavor while ensuring they are cooked to your desired level of doneness.However, if you still prefer to use a pressure cooker, you can try using lower pressure settings and shorter cooking times to minimize the risk of overcooking. It’s important to monitor the mushrooms closely to prevent them from becoming too soft or losing their shape.
  • Enhances Nutritional Value: Cooking mushrooms breaks down the cell walls and makes the nutrients more bioavailable, allowing the body to absorb them more easily.
  • Reduces Toxins: Cooking mushrooms helps to break down toxins that may be present.
  • Improves Taste and Texture: Cooking mushrooms can also enhance their flavor and texture, making them more enjoyable to eat.
  • Better Nutritional Value: Fresh mushrooms have a higher nutritional value as they contain more vitamins, minerals, and antioxidants.
  • Enhanced Flavor and Texture: Fresh mushrooms have a better texture and more robust flavor than older mushrooms.
  • Improved Cooking Results: Fresh mushrooms cook more evenly and retain their shape better.
  • At Roodi we primarily grow mushrooms on Paddy straw .
  • Rice Bran (outer brown layer removed during polishing), Wheat Bran are also added to enhance nutrition and taste.

Mushrooms can be a good source of vitamin D when they are exposed to sunlight. For this just place the mushrooms in direct sunlight for 20mins to 2hrs  or even more

Tips for Improved Results:

  • Vitamin D is produced just few microns on the surface so exposing the gills gives better results also turning or shuffling them to expose different sides helps. Leafy mushrooms like Oyster mushrooms have large surface areas.
  • Choose mushrooms that are fresh and in good condition, as they will have more nutrients and will generate more vitamin D when exposed to sunlight.
  • Take vitamin D with fat: Vitamin D is a fat-soluble vitamin, which means it is better absorbed when taken with a meal that contains some fat.
  • Get enough vitamin K: Vitamin K works together with vitamin D to support bone health. Foods rich in vitamin K include leafy green vegetables, fermented foods like millet porridge (ambali), sauerkraut and kimchi, Dairy products from grass-fed cows, such as cheese, butter, and yogurt, are good sources of vitamin K2.
  • Get enough calcium: Calcium works together with vitamin D to support bone health. Sesame seeds are rich source of calcium .

  • Grilling: Grilling mushrooms is another healthy option, as it doesn’t require any added fats. It also gives them a slightly smoky flavor that can be quite delicious. When grilling mushrooms, it’s best to use a grill basket to prevent them from falling through the grates.
  • Roasting: Roasting mushrooms in the oven is a simple way to bring out their natural sweetness. This method is especially good for meaty mushrooms like portobello or shiitake. Toss them with a little bit of olive oil and seasonings before roasting to enhance their flavor.
  • Steaming: Steaming mushrooms is a healthy cooking method that helps to preserve their nutrients. It’s also a good option for those who are watching their calorie intake, as it doesn’t require any added fats. To steam mushrooms, simply place them in a steamer basket over boiling water for a few minutes until tender.
  • Boiling: Boiling mushrooms is another option, but it’s not the healthiest way to cook them. This method can cause them to lose some of their nutrients and flavor. If you do decide to boil mushrooms, be sure to use the cooking water in soups or stews to retain some of their nutritional content.
